Do you Know What Mexican Queso Fundido Is ?

Queso Fundido cheese sauce

Ingredients:
-1 quart Whole Milk
-1oz (by weight) sodium citrate
-2 tbsp rice vinegar
-8oz cream cheese
-2 lbs medium cheddar cheese
-salt to taste
-2 tbsp Spiceology chile guajillo powder
-1 tbsp Spiceology ground chipotle
-2 roasted chopped chile poblanos

-bring the milk ,guajillo, Chipotle and sodium citrate to a simmer. Must do this to hydrate the sodium citrate.
-whisk in cream cheese and bring up to a simmer.
-immediately add cheddar cheese and remove from the heat and cover. Let sit for ten minutes.
-add the vinegar and blend til smooth. Toss in the chopped poblanos. Blend a touch to break up the poblanos if you want.
